Cassis- A Story of Development on a Complex Barrel-Aged Sour

Cassis is a complex barrel-aged sour inspired by simple childhood memories of sour fruit in Germany.

In 2009, Derrick Morse was an avid home-brewer putting his recent food science college degree to work experimenting with sour beers in Boulder, Colorado. Sours had been around for centuries, but at that time, the style was not widely marketed to the mainstream beer consumers and was misunderstood, even among pioneering homebrewers. However, Derrick admired the style and genuinely enjoyed sour beers, especially from breweries like Cantillon, Brewfontaine.

With no literature on the style nor recipes to follow, Derrick spent $20 on a packet of lactobacillus and dove into experimentation. As a student of food science, he knew that lactobacillus and bacteria grow exponentially in high temperatures, but it was a cold winter in Colorado. So he creatively converted his garage into a mad scientist’s lab using a stainless-steel keg as a fermentor and placed it inside a water bath with aquarium heaters cranked up to 90 degrees.

Derrick explains, “I had this keg in a water bath with a water circulator pushing the water around, and two aquarium heaters keeping it warm. Every so often I would add more water since it evaporates. Friends would come over to brew and hang out and wondered what the hell I was doing with that weird rig.”

He described his first sour as interesting. “It was pretty good for my first sour. I had been home brewing for about two years at that point, drinking sours. I had a good understanding of the fundamentals and what it should taste like. It had some funk to it, and I was proud of it for being

 

my very first sour … and interestingly, a recipe that we eventually turned into Cassis. Though it was nothing compared to what we do today.”

In 2014, as Derrick Morse and Chad Frost were opening up Mantra Artisan Ales, Derrick was inspired by Rodenbach’s Alexander Grand Crew with cherries. Rodenbach’s version reminded Derrick of eating “Johannisbeeren”, or sour red currants, in Germany as a child. These childhood flavor memories inspired the name Cassis. In Belgian beer nomenclature, “Cassis” typically means the beer recipe includes currants. So Derrick named the sour beer Cassis based on this tradition. “It was pretty simple and obvious. It’s like calling an IPA an IPA. It’s like a style.”, says Derrick.

Derrick wanted the beer to be unique enough to spark conversation, and elegant enough to enjoy during the holidays. With this in mind, he visited breweries that specialized in barrel aging, to compile notes and outline specific goals for the Cassis recipe. Morse asked nearby Arrington Vineyards for some barrels to age the beer, and they were more than happy help. These barrels were very complex vessels, originally filled with Tennessee Whiskey, and then used to age Arrington Vinyard’s Antebellum series. The vanilla, wine, and bourbon flavor profiles of the barrels made them perfect for aging Mantra’s Flanders Red, Amour Rouge because Red Flanders already have cherry characteristics.

Morse explains the Cassis aging process, “It takes three isolated aging processes. We age our Flanders Red, Amour Rouge in Antebellum barrels. In a second barrel, we age Amour Rouge with currants. In a third barrel, we age Amour Rouge with cherries. Then we blend these three

 

barrels for the final recipe. It takes 8-12 months to get the perfect blend. Throughout the aging process, samples from each barrel are blended together and evaluated until it reaches its perfect maturation of flavor.”

The blending process is the most crucial part of creating Cassis, and the whole team participates. Everyone on the blending panel is assigned a multiplier based on their experience in tasting that determines their influence on the final blend. Higher numbers have a greater influence on the final flavor profile, but everyone has an influence. The blending process takes a lot of time, patience, and experience. Samples are taken from each barrel: the mother Amour Rouge beer, the Antebellum batch, a nine-month-old, three-month-old, and one-month-old Flanders, and previous batches. Each is poured into numbered glasses and team members rate the glasses on a flavor wheel. Initial blends are created based on the flavor profiles of each barrel, and the team pairs specific barrels together into the semi-final blends, which Derrick uses for his final blend.

The blending process makes every batch of Cassis unique. Morse shares, “In 2016, the Cassis blend was rich, jam-like, sweeter, and funky sour. It was well balanced between cherry and currants. The 2017 batch was more cherry forward because the customer base asked for it. Cassis 2018 will return to even balance, bringing back the strong currants flavor, with a jam-like, rich flavor profile. That’s where this beer shines.”

Mantra takes the time to make each batch unique and personal, following the personal mantra of quality over quantity. Every little detail of Cassis is an intentional work of art. Once the beer is blended, Cassis is treated like royalty in the beer world, with true elegance that speaks for itself.

 

Beautifully designed, embossed and foiled linen labels are applied by hand, and bottles are sealed with wax and stamped with the Mantra logo. Cassis is bottled in 750 mL bottles. When asked why he chose the bigger bottles, Derrick’s answer was simple: “I like to share … Something as beautiful as Cassis deserves to be shared with others. Cassis stands out in our spectrum of sours. We have no plans to change the recipe or process. Both are perfect, just as they are. Fans wait patiently all year for this beer to release because they know that art takes time. In the modern world, science enables us to mass produce the same thing over and over again, with precision and accuracy. But Cassis isn’t like that. It’s more art than pure science of brewing. We don’t set the deadline. It tells us when it’s ready … and when it does, it is a prized masterpiece that evokes wonder.”

We hope everyone is excited for the lobster rolling in on the first Friday of each month the rest of this year! Cousins not getting any better than this! Read below some of our favorite pairing with Cousins Maine Lobster dishes, and also find out how you can enter to win a Mantra Xmas giveaway!

Here at Mantra, we’re all about creating a beer that is the perfect pair for a dish. Seafood is one that is harder to pair, because food preparation is key, and “it depends” applies heavily. As it would for any dish…? Anyway, what flavors would complement the savory balance of sweet and salty of fresh lobster, with a coating of warm melted better, a zing of lemon, and yeasty goodness from a warm toasted roll? Similar flavors! When doing food pairings with beer, it is important to remember that the intensity of flavor in your beer, should be as equally intense as your dish.

I had a little fun and did some experiments! Here is what I came up with for some good pairings while you’re enjoying a delicious dish from the best lobster on wheels.

Battleground

Battleground is Franklins beer, and what better way to enjoy it than at Franklin’s brewery on food truck Friday?! A Wit with orange peel and coriander, this beer is a great pair for any tasty Cousins Maine dish! Because Battleground is a Wit, you’re able to pick up a remnant that resembles biscuits to pair perfectly with your fresh, warm, toasted, and buttered down roll. The orange peel highlights citrus notes from a hint of lemon, and the coriander ads to the subtle hints of fresh tomatoes and chives sprinkled on top. Our favorite Cousins dish to enjoy Battleground with is their lobster quesadilla!

Avec Moi

We know, we know. A sour? If we’re being frank, we wouldn’t be Mantra without somehow finding a way to pair a sour beer with something as delectable as Cousins Maine lobster rolls. Though, a sour is the perfect pair for any seafood/fish dish! Avec Moi is our Sour Belgian Pale Ale with light citrus notes that are subtle and smooth enough to not overwhelm your taste buds and creates a perfectly delightful whirlwind of flavors. The bright and light citrus flavors bring out the hint of lemon juice throughout, and act as a cleanse for your pallet after every sip giving you the feeling like its the first bite each time. The subtle sweetness compliments the salty hints of drawn butter, and highlights the sweetness in fresh lobster.  Avec Moi is, in my opinion, the best pairing for any of Cousins delectable lobster dishes!

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Engage and educate consumers on brewing process, craft beer culture and LIB Brands
  • Pour beer tastings and/or facilitate dry demonstrations.
  • Execute and set up LIB’s presence at off-site events and retailers.
  • Secure and transport equipment, beer, and promotional materials to and from event sites.

Hiring a Taproom Manager/Community Liaison

POSITION SUMMARY:
We are looking for an energetic and diverse person to be a rainmaker for Life is Brewing taprooms.

The Taproom Manager/Community Liaison is to implement the strategic use of communication vehicles to advance the mission of Life is Brewing taprooms; advising the COO and CEO on taproom issues; serving as a liaison on community events, organizations, committees, and other business organizations. This person will facilitate proactive relationships between LIB and the broader Williamson and Rutherford community. The Taproom Manager/Community Liaison coordinates recommendations to the management team relative to public relations and functions attended on the behalf of LIB. Particular focus of this job is to drive revenue into the taproom via strategic relationships with other businesses.

The Tap Room Manager/Community Liaison will also supervise staff working in both tap rooms, manage and coordinate keg inventory with brewery production staff, execute a variety of events throughout the year, and assist in the strategic planning and budgeting for all the tap rooms.

The ideal candidate loves craft beer, is extremely organized and detail oriented, and is accountable as well as dedicated to the advancement of LIB products.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
• Attends district association meetings, Town hall, Chamber, Rotary, and community organizations for the purpose of developing a company presence in the community and serving as a liaison between external companies and LIB.
• Develops, plans, and/or coordinates various taproom-wide company activities (e.g. community outreach, media/public relations functions, etc.) for the purpose of enhancing LIB/community relationships, improving customer services/programs, and promoting a positive LIB public image.
• Servs as the point of contact for all taproom staff.
• Schedules taproom staff according to demand and coordinates with Director of Events for staffing of special events.
• Hiring, training and managing tap room staff on all necessary duties to create the best taproom experience to our customers.
• Oversee cost control and profitability of the taproom.
• Leads the direction of both taproom experiences in conjunction with existing taproom manual while staying up to date on market and industry trends and opportunities.
• Maintains a clean, friendly and welcoming environment for all guests at all times.
• Communicating beer and merchandise needs for inventory to management. Understanding rate of sales and when to order to keep stock on hand and up to date of all merchandise.
• Trains the taproom staff on how to conduct fun and energetic tours of the brewery.
• Managing the coordination for all special events hosted in the taproom while keeping a calendar of booked events and upcoming events with the director of events. Communicates those events to the Communication Coordinator effectively to promote that event on social media.
• Conducts continued beer training to taproom staff with weekly sensory tastings and tests.
• Develop a lead BeerTender cicerone training program and lead all Day One on boarding training for new hires.

• Previous brewery or craft beer experience preferred.

Hiring a Warehouse Shipping and Receiving Coordinator

JOB TITLE: Warehouse Shipping and Receiving Coordinator
LOCATION: Franklin TN (Moving to Murfreesboro TN in November)
REPORTS TO: Lead Brewer
POSITION TYPE: Full-time, Hourly
EXTERNAL POSTING DATES: 8-2-18 – 8-14-18

POSITION SUMMARY:

• Assemble and ship orders for distributors in accordance with SOPs
• Organize and maintain shipment paperwork.
• Safely load product on truck picking up product.
• Report keg movements in Orchestrated Beer

Warehouse Operations

• Maintain a SAFE work environment and follow our safety manual and work practices.
• Conduct daily maintenance checks on fork lift / pallet jack and record in log.
• Drive the “Life is Brewing” box truck with company SOPs, and Tennessee DOT.
• Conduct daily maintenance checks on truck and keep detailed record inside truck.
• Report any damage or maintenance issues regarding truck to Director of Brewing Operations
• Conduct monthly maintenance on forklift (grease).
• Be detailed oriented: maintain an efficient, clean and organized warehouse.
• Safely unload and organize raw material deliveries.
• Transfer raw materials and packaging according to brew schedule.
• Maintain valid driver’s license.

Inventory Management

• Work with the Lead Brewer, and Packaging team to schedule transfers of finished beer to the warehouse and packaging material to the brewery.
• Work with DOBO to correct and troubleshoot inventory inconsistencies and anomalies.
• Monthly warehouse physical inventories, and spot inventories as needed by Production or Inventory Manager.
Other Duty’s
• Pop packaging material for packaging
• Fill in on the packaging line for Packaging tech
• Pull Keg orders for taproom and manage brewery walk in cooler.
• Clean kegs for the packaging team and coordinate with the director of brewing operations on volume needed.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
• Greet customers cheerfully and encouraging an atmosphere of hospitality in the taproom
• Collect money for drinks served.
• Check identification of customers to verify age requirements for purchase of alcohol.
• Clean glasses, utensils, and bar equipment.
• Balance cash receipts.
• Stock bar.
• Serve draft beer.
• Up-sell merchandise to patrons in the taproom.
• Pour or serve Life is Brewing beer at beer festivals and tastings when scheduled.

JOB REQUIREMENTS:
• Bartending or wait staff experience desired but we’d be willing to train the right person.
• Cicerone certified a plus. Will be required to pass level one cicerone within first month of hiring.
• Craft beer knowledge a required.
• Must be able to lift 150 pounds.
• Must be able to work efficiently in a fast-moving environment.
• Must be 21 years or older.
• Must enjoy working with the public in a positively, friendly manner.
• Must be an effective communicator.

Hiring a QC/QA Laboratory Technician

JOB TITLE: QC/QA Laboratory Technician

POSITION SUMMARY:

Life is Brewing is looking for a quizzical mind, a seeker, a QC/QA lab tech that envelopes the mindset of Life is Brewing.

The perfect Lab Tech will work collaboratively with the Head Brewer to produce high quality product with efficiency for our three brands; Mantra Artisan Ales, Steel Barrel Brewing Co. and Humulus Project at our two locations. The Steel Barrel location is a state of the art brewing campus on an 84 acre property designed around fermentation science. You will be working with MTSU’s Fermentation science program daily as they have an onsite facility at our location.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
• Collection and management of samples according to the sampling plan.
• Preparation of stock solutions and media / inoculating and incubating samples.
• Developing new microbiological approaches / microbiological troubleshooting.
• Maintenance of all laboratory data.
• SOP development and maintenance.
• Cleaning and decontamination of the laboratory.
• Helping as required to maintain all quality standards within the laboratory.
• Help the head brewer manage brewery operations of our 60BBL brew system crafting 12k+ BBLS per year.
• Lead, manage, and schedule the propagation of yeast as needed.
• Effectively represent Beer Production in weekly cross department meetings regarding Quality and Production.
• Advocates a continuous improvement culture throughout his/her team.
• Holds self and brewers accountable for adhering to SOPs and maintaining a sanitary and micro-biologically stable work environment.
• Facilitates future growth of the brewery through continuous optimization of current processes.
• Assists in implementation of new equipment and processes.
• Works with senior management on new product development initiatives.
• Maintain brewing, cellaring, filtration, packaging and other related documentation in an organized and complete manner.
• Provide hands on relief of all positions as necessary.
• Help in the creation of research projects in collaboration with MTSU staff.

REQUIRED SOFTWARE/HARDWARE USED:
• MS Office products; including Excel, Word, and Power Point a must.
• Windows 10 OS.
• Orchestrated Beer.
• Drop Box and Teamwork experience a plus.

THE ULTIMATE CANDIDATE WILL POSSESS:
• Bachelor degree in microbiology, biology or another relevant field.
• Post graduate experience desirable.
• Experience in a food or beverage based field is desirable.
• Experienced in microbiological techniques (cultural and molecular).
• Understanding of the microbiology of food and beverage organisms, especially yeast.
• Evidence of working with good laboratory practice.
• Must be fastidious and incredibly clean.
• Able to work efficiently and with incredible attention to detail.
• Strong mechanical and problem-solving aptitude a plus.
• Excellent verbal and written communication skills.
• The ability to work unsupervised and manage your own time and the time of others effectively
• Focus on quality and consistency of finished product

WORK ENVIRONMENT:
• Work is at Mantra Artisan Ales until our new facility is operational in September afterwards work is primarily performed at Hop Springs in Murfreesboro. With occasional trips to Mantra Artisan Ales and the future brewpub in Nashville.
• Occasional travel required.
• May be asked to attend beer fests and must be able to help setup and break down.
• Must be able to pick-up 55lbs and possibly stand for long periods. Immediately
